What Makes Sertodo Special To Us
Sertodo Copper was founded by Jonathan Beall, whose journey began in 1997 selling handcrafted copper throughout the United States from the back of his truck, affectionately named El Macho. His path led him to Santa Clara del Cobre in the Sierra Madre Occidental of Michoacán, where he apprenticed for two years under Maestro Maximo and Maestro Chema, learning a copper-working tradition that spans more than 1,000 years.
After completing his apprenticeship, Jonathan partnered with Maximo’s eldest son, Martin, to build a workshop rooted in respect for craft, family, and heritage. What started as a simple dirt-floor, two-person space has grown into a thriving copper studio — but the commitment to traditional craftsmanship, integrity, and community remains unchanged.

Love this pan!! Oh my gosh I like to cook and a nice pan can make all the difference. It’s very sturdy, easy to clean, food doesn’t stick. It’s very solid. If I could afford it, I would buy the whole set.Another thing I like about it is the spoon rest on the handle. I have used it a few times and it still looks like brand new even on the bottom the copper is a great quality. I almost wish I would’ve paid a little more and got the bigger size pan.
I have wanted a copper Paella pan in my life for many years. This handformed Austin Texas 15" pan has been the answer to that desire. The photos show it proudly displayed on my pot rack and the very first vegetable Paella that was prepared utilizing this pan on an electric cooktop. . The heat distribution was excellent and the Paella was finished with a great Socarrat on the bottom of the pan, which is something that had been eluding my attempts at Paella. It is a beautul addition to my kitchen!

Made Valencian Paella with this pan and came out perfect. Heats evenly, cooks great, and works perfectly if you are hoping to get the coveted Socarrat. Love this pan, makes me want to throw more parties just to show it off. Pricey yes, but will last your lifetime and an heirloom to hand down. America has enough trash, buy something that will last!Take care of it, wash by hand, dry it thoroughly after cleaning and it will last. If that is too hard to understand, buy the $25 pan. The bad reviews are people who watch too much reality cooking shows and think they are chefs because they bought a chef jacket or a toque. Good pans and knifes are family members, treat them well, give love not laziness.

I have so much copper and many copper pans, but this is the first time I have ordered a Sertodo Copper pan. This thing is the real deal, excellent craftsmanship, really quality copper. I should’ve known because I have other products by them, but I have never ordered one of their pan…. I will continue to order until I have the whole set. These are truly magnificent. Worth every cent!!
I purchased the 15 in. and the 18 in. together.They arived at the same time in a timely manner.The second i braught them inside i knew i was in trouble. When i measured my oven it was about 19 inches from right to left. The 18 in. pan fit perfectly until i closed the door. The door would not close all the way. So i had to send this one back. It took a long time to get aporoval for a refund and now i have to wait another week or 2 for the actual refund to go through. But i expected that to be the case with such an expensive piece of art.Let me tell you something, that 15 inch pan is PLENTY large enough.AND THESE ARE TOTALLY GORGEOUS!

Perfect size for 6-8 people with usual toppings (fish or meat). As with all copper cookware, it needs to be cleaned and polished before use (each time) because the copper tarnishes easily. I use Bio cleaner since it can be used on food surfaces. Copper is very conductive, so heat over slightly lower temps. I make the paella on top of the stove and then stick it into the oven to brown and crisp the bottom. If using an outside grill, it works easily by cooking with the grill door open and then closing it to crisp the bottom. Perfect pan.
This paella pan was better than I imagined; I knew I was putting down ~170 USD and had high expectations because It's not cheap. What an amazing cooking experience! I'm new to cooking and this is my first quality pan. The thing I love the most about the pan is how uniformly it cooks. The copper distributes the heat evenly across a 15" pan using a single burner. It's great. The other thing is that it's gorgeous. I love bringing it out on the deck and placing the finished paella at the center of the table for our guests. After use, I have it actually mounted on the wall. I love the Sertodo service and will buy from them again. It's a small operation and I felt they really cared that I have a great experience with their product.With my first couple of paellas, I had a hard time cleaning it. I called Sertodo and they transferred me to an in-house chef who chatted me with on FaceTime, showed me his own pans, and gave me a series of tips I'll share with you here.1. Make sure the pan is hot before putting in the ingredients in order to create the Maillard reaction (The Maillard reaction is a chemical reaction between an amino acid and a reducing sugar, usually requiring the addition of heat. Like caramelization, it is a form of non-enzymatic browning). The pan heats up very quickly by the way, unlike cast iron.2. Make sure there's enough oil in the pan. The pan shouldn't stick to the tin at all.3. For best results, add your liquids first if you can, then add your veggies or other items making sure you keep some liquid in the pan. That's a big one. Once I started doing that, everything went well. I actually do some frying in another pan and then transfer to the Sertodo pan once I'm ready to use the paella's broth base.4. Make sure you use a silicone or wooden spatula (never metal) when stirring the ingredients.5. As far as cleaning is concerned, if you did get food stuck on it (which shouldn't happen if you do the above), add water and scrape with a wooden or silicone spatula (not metal) so you don't scratch it. Use a soft sponge to wash it.6. If you use a copper cream on the outside of the pan, the copper should be as gorgeous as when you first got the pan, but expect the tin inside the pan to darken after the first use. If will continue to darken and that's normal. The Sertodo chef showed me his pans and they were all shades of grey on the inside. So expect that. It's normal and it doesn't affect the cooking experience. And after a few years, you may want to have it re-tinned, a service they offer a couple of times a year I believe. They said to sign up to their newsletter to find out when the re-tinning takes place.

Exactly what I needed for paella and arroz con pollo!
Simmering the rabbit and chicken as I type this! What a lovely pan simply to look at. Once on the burner, it’s quality is such that the meats hardly stick to it, which is a testament in its own right. The handles too, are quite resistant to heat, which is another sign of a good quality pan.Very happy with it thus far.

It is absolutely beautiful and the price is fantastic. I am treating this as a work of art which is on display in my kitchen. I will undoubtedly cook with this as well, but it deserves 5 stars on aesthetics alone. It is stunning.
